1 lb granulated sugar (21/4 c) 1 lb butter (4 sticks) 4 egg yolks 1/2 lb blanched, ground almonds (2 cups) 1 tsp vanilla 1 1/4 lb flour (5 c) 2 egg whites, slightly beaten until foamy a little granulated sugar, for decoration Mix butter and sugar, then eggs, then almonds, then vanilla with mixer. Then add flour by hand. Chill dough before rolling. Flour board and roll to 1/4-inch thickness. Cut in strips. Brush with foamy egg white and sprinkle with sugar. Bake 350x 10-12 minutes. (Watch carefully.) Yield approximately 19 dozen, depending on whether strips are 2" or 4". Companion to Vanilla Strips, as this uses yolks left over from the other recipe. (Feldmeier)
